Ingredients

  • 3 cups canned chickpeas
  • 2 cloves garlic
  • ¼ cup olive oil
  • ¼ cup tahini
  • 1 whole lemon
  • 3 cups frozen spinach
  • 2 cups canned artichoke hearts
  • to taste kosher salt
  • to taste black pepper

Instructions

  1. Combine chickpeas, garlic, olive oil, tahini, some lemon juice, and seasoning in a food processor.
  2. Blend until creamy, adding reserved chickpea liquid for consistency.
  3. Add spinach and artichoke hearts, pulsing to incorporate.
  4. Adjust seasoning with salt, pepper, and more lemon juice if needed.
  5. Transfer to a bowl, cover, and chill for at least 2 hours.
  6. Remove from fridge 10 minutes before serving.
