Warm Mediterranean Spinach Artichoke Hummus Dip

Ingredients

The dip

  • 10 oz Roasted Red Pepper Hummus or Regular hummus
  • cup plain Greek Style yogurt
  • 2 cloves garlic
  • ½ cup parmesan crumbles or shredded
  • 1 cup spinach leaves
  • 4 hearts artichoke
  • 3 leaves basil
  • ½ small lemon
  • to taste salt/pepper
  • to drizzle olive oil

For serving

  • to taste optional herbs, spinach, olives
  • as needed sliced veggies or gluten free toast/crackers

Instructions

  1. Preheat the oven to 400°F and grease an 8×8 baking dish.
  2. In a food processor, blend hummus, yogurt, artichoke, basil, spinach, artichoke hearts, lemon juice, salt, pepper, and garlic until mixed.
  3. Add ⅓ cup of parmesan and blend again until creamy, adding olive oil if needed.
  4. Transfer the mixture to the greased baking dish and top with ¼ cup of parmesan.
  5. Bake covered for 20 minutes, then uncover and bake for an additional 10 minutes, broiling the last minute.
  6. Top with additional herbs, spinach, lemon slices, and drizzle with olive oil before serving.
  7. Serve immediately with veggies or gluten free toast/crackers.
