Baked Spinach Artichoke Dip

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 5 oz. fresh spinach
  • 4 pieces canned artichoke hearts, drained and roughly chopped
  • 1 cup plain nonfat Greek yogurt
  • 4 oz. cream cheese, room temperature
  • teaspoon salt
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • ½ cup mozzarella cheese, divided

Instructions

  1. Preheat the oven to 375ºF.
  2. In a bowl, mix artichoke hearts, Greek yogurt, cream cheese, salt, lemon juice, garlic powder, and ¼ cup of mozzarella cheese.
  3. In a pan, warm olive oil, add garlic and spinach, and sauté for 5-7 minutes.
  4. Combine the sautéed spinach and garlic with the cream cheese mixture.
  5. Transfer the dip to a small casserole dish and bake for 20 minutes until bubbling.
  6. Remove from oven, top with the remaining mozzarella cheese, and broil for about 3 minutes until browned.
  7. Let cool for 5 minutes before serving.
