Ingredients

  • 10 oz frozen spinach
  • 8 oz cream cheese
  • ½ cup mayonnaise
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 14 oz can of artichokes, drained and finely diced
  • ½ cup fresh red peppers, diced
  • ½ cup shredded parmesan cheese
  • 1 ⅓ cup shredded mozzarella cheese

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Thaw the frozen spinach in the microwave for 2-3 minutes, then squeeze out excess liquid.
  3. 3. In a large bowl, combine cream cheese, mayonnaise, garlic, salt, and pepper, and blend until fluffy.
  4. 4. Fold in the spinach, artichokes, red peppers, parmesan cheese, and 1 cup of mozzarella until well combined.
  5. 5. Transfer the mixture to an 8x8 baking dish and top with the remaining ⅓ cup of mozzarella.
  6. 6. Bake for 25-30 minutes until slightly browned on top.
  7. 7. Serve immediately.
