Instructions
- Heat olive oil in a skillet and wilt the spinach for 2-3 minutes, then set aside to cool.
- Preheat the oven to 350°F (177°C).
- In a bowl, heat cream cheese until soft, then mix in mayonnaise, sour cream, parmesan, artichokes, garlic, black pepper, and half of the mozzarella.
- Squeeze excess moisture from the cooled spinach and add it to the mixture.
- Transfer the dip to a baking dish, smooth the top, and add the remaining mozzarella on top.
- Bake for 20-30 minutes until hot and bubbly, then serve warm.
