Spinach Artichoke Dip

Ingredients

  • 8 ounces cream cheese
  • 1 cup sour cream
  • 8 ounces fresh spinach leaves
  • ¾ cup marinated artichoke hearts, coarsely chopped
  • 1 teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ cup grated parmesan cheese
  • cups shredded mozzarella cheese, divided
  • 1 tablespoon chopped parsley
  • to taste sliced bread, crackers and vegetables for serving
  • as needed cooking spray

Instructions

  1. 1. Steam or sauté the spinach until wilted, then let it cool and wring out excess water before coarsely chopping it.
  2. 2. Preheat the oven to 375°F and coat a small baking dish or skillet with cooking spray.
  3. 3. In a bowl, combine cream cheese, sour cream, cooked spinach, artichoke hearts, garlic, salt, pepper, parmesan cheese, and ¾ cup of mozzarella cheese. Mix well.
  4. 4. Spread the mixture into the prepared dish and top with the remaining mozzarella cheese.
  5. 5. Bake for 20 minutes until bubbly and melted, then broil for 2-3 minutes until cheese is browned.
  6. 6. Sprinkle with chopped parsley and serve immediately with bread, crackers, and vegetables.
