Ingredients

  • 1 cup frozen chopped spinach, thawed
  • 1 small jar marinated quartered artichokes, chopped
  • 4 oz. cream cheese
  • ¼ cup freshly grated parmesan
  • cup mayonnaise
  • cup sour cream
  • 1 tsp. crushed red pepper
  • ½ tsp. garlic powder
  • ¼ tsp. salt
  • ½ cup shredded cheddar or mozzarella
  • ½ tsp. seasoned salt (for garnish)
  • 6 pieces grape tomatoes, chopped or thinly sliced

Instructions

  1. Boil the thawed spinach and chopped artichokes in 1 cup of water for 5 minutes, then drain thoroughly.
  2. In a mixing bowl, combine the spinach and artichokes with cream cheese and mix well.
  3. Add sour cream and mix again, followed by mayonnaise, ensuring all ingredients are evenly distributed.
  4. Stir in the seasonings until fully absorbed.
  5. Transfer the mixture to a small, oven-safe baking dish, top with shredded cheese and seasoned salt.
  6. Bake at 350°F for 15 minutes.
  7. Remove from the oven and top with chopped or sliced tomatoes before serving warm.
