Creamy Spinach Artichoke Dip

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 Medium Onion, finely diced
  • 4 Cloves Garlic, mashed
  • 1 14 Ounce Can Artichoke Hearts, drained and roughly chopped
  • 1 Lemon Zested
  • 10 Ounces Fresh Spinach, chopped (or 16 Ounces Frozen Spinach, thawed and patted dry)
  • ½ Teaspoon Crushed Red Pepper Flakes
  • 1 Teaspoon Cumin
  • 1 Teaspoon Ground Black Pepper
  • 8 Ounces Cream Cheese
  • ¾ Cup Plain Greek Yogurt
  • ¾ Cup Parmesan Cheese, freshly grated
  • 1 Cup Mozzarella Cheese, grated

Instructions

  1. Heat a skillet over medium-high heat and add olive oil.
  2. Dice the onion and add it to the hot pan, cooking for 2-3 minutes.
  3. Mash the garlic and add it to the pan, sautéing for another 2-3 minutes.
  4. Add the artichoke hearts and lemon zest, cooking for another 2 minutes.
  5. Stir in the spinach and seasonings until the spinach wilts.
  6. Mix in the cream cheese and yogurt until well combined.
  7. Add the grated parmesan cheese and mix well.
  8. Top with an even layer of mozzarella cheese.
  9. Broil in the oven for 3-4 minutes until the cheese is golden and browned.
  10. Remove from the oven, allow to cool slightly, then serve with tortilla chips or bread slices.
