One Pan Cajun Shrimp And Cauliflower Rice

Ingredients

Cajun Seasoning

  • 2 tsp paprika
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • ½ tsp ground black pepper
  • ½ tsp dried oregano
  • ¼ tsp cayenne pepper
  • ¼ tsp crushed red pepper flakes

Main Ingredients

  • 6 cups riced cauliflower
  • 3 cups spinach
  • 1 lb shrimp, peeled and deveined
  • Fresh parsley, chopped optional

Instructions

  1. Combine all of the cajun seasonings in a small bowl and set aside.
  2. Prep cauliflower and shrimp as noted.
  3. Add avocado oil, cauliflower rice, half of the cajun seasoning, and spinach to a large skillet over medium heat.
  4. Stir to mix everything together and let cook for about 3 minutes until the cauliflower rice begins to soften.
  5. Season shrimp with the remaining half of the cajun seasoning and add to the pan.
  6. Cover and cook for another 5 minutes, until shrimp is pink and cooked through.
  7. Remove from heat, top with chopped parsley, and serve.
