Instructions
- Combine all of the cajun seasonings in a small bowl and set aside.
- Prep cauliflower and shrimp as noted.
- Add avocado oil, cauliflower rice, half of the cajun seasoning, and spinach to a large skillet over medium heat.
- Stir to mix everything together and let cook for about 3 minutes until the cauliflower rice begins to soften.
- Season shrimp with the remaining half of the cajun seasoning and add to the pan.
- Cover and cook for another 5 minutes, until shrimp is pink and cooked through.
- Remove from heat, top with chopped parsley, and serve.
