Cajun Shrimp Fried Rice

Ingredients

  • 1 lb medium shrimp, peeled and deveined
  • 4 Tbsp Cajun seasoning, divided
  • 1 medium red or green bell pepper, coarsely chopped
  • 1 medium onion, coarsely chopped
  • 6 cloves garlic, coarsely chopped
  • ½ cup vegetable oil
  • 5 cups chilled cooked rice
  • to taste Kosher salt (optional)
  • as needed Cilantro leaves with tender stems (for serving)

Instructions

  1. Toss the shrimp with 2 Tbsp of Cajun seasoning in a bowl.
  2. Pulse the bell pepper, onion, and garlic in a food processor until combined but still chunky.
  3. Heat the vegetable oil in a large skillet over medium-high heat, add the pepper mixture and remaining Cajun seasoning, and cook until softened.
  4. Add the shrimp to the skillet and cook until opaque, then add the chilled rice and stir to combine, cooking until warmed through.
  5. Divide the fried rice among plates and top with cilantro leaves.
