Cajun Shrimp Fried Rice

Instructions
- Toss the shrimp with 2 Tbsp of Cajun seasoning in a bowl.
- Pulse the bell pepper, onion, and garlic in a food processor until combined but still chunky.
- Heat the vegetable oil in a large skillet over medium-high heat, add the pepper mixture and remaining Cajun seasoning, and cook until softened.
- Add the shrimp to the skillet and cook until opaque, then add the chilled rice and stir to combine, cooking until warmed through.
- Divide the fried rice among plates and top with cilantro leaves.
