Shrimp Cauliflower Fried Rice

Ingredients

  • 2 cloves garlic, minced
  • 1 tsp grated ginger (optional)
  • 2 tbsp butter
  • 20 oz frozen cauliflower rice (preferably organic)
  • 10 oz frozen mixed stir fry veggies (carrots, peas, onions)
  • 1 lb shrimp, deveined with shells removed
  • 4 large eggs, beaten
  • 1 bottle Japanese BBQ Sauce
  • to taste green onions, for garnish

Instructions

  1. Heat the grill or skillet to high heat and melt the butter.
  2. Sauté the minced garlic for one minute.
  3. Add the cauliflower rice and mixed vegetables, spreading them out to cook until crispy.
  4. Splash in the Japanese BBQ sauce and mix it into the rice and veggies.
  5. Pour the beaten eggs onto the griddle and mix them into the rice once cooked.
  6. Add the shrimp and cook until they turn pink and are cooked through.
  7. Combine everything in a large bowl, drizzle with more BBQ sauce, and garnish with green onions.
