Instructions
- Whisk together the soy sauce, shaoxing wine, oyster sauce, and sriracha in a bowl and set aside.
- Preheat a skillet with 1 Tbsp of olive oil over medium-high heat.
- Add shrimp and salt, cooking for about 1 minute per side until opaque. Transfer to a plate.
- In the same skillet, add the remaining olive oil, carrots, and sauté for 2 minutes.
- Add bell pepper and the white/light portion of green onions, sauté for another 2 minutes.
- Toss in garlic and ginger, sautéing for an additional 30 seconds.
- Move the mixture to one side of the skillet, drizzle sesame oil on the empty side, and add the rice, spreading it evenly. Let it cook for about 3 minutes, tossing occasionally.
- Add the sauce mixture and peas, cooking for 1 more minute.
- Scoot the mixture to one side, add the eggs and salt, scrambling until barely cooked through.
- Return the shrimp to the skillet, add green onion greens and cilantro, and toss everything together. Serve warm.
