Shrimp Fried Rice

Ingredients

The sauce

  • 1 ½ Tbsp soy sauce
  • 1 Tbsp shaoxing wine
  • 1 Tbsp oyster sauce
  • 2 tsp sriracha

The main ingredients

  • 2 Tbsp light olive oil or vegetable oil
  • 1 lb. medium or small shrimp, peeled and deveined
  • Few pinches salt
  • 1 cup diced carrot
  • 1 cup diced red bell pepper
  • ¾ cup green onions, sliced
  • 1 Tbsp minced garlic
  • 1 Tbsp peeled and minced ginger
  • 1 Tbsp sesame oil
  • 4 cups leftover cooked jasmine rice
  • 3 large eggs, blended
  • 1 cup frozen peas
  • 3 Tbsp chopped cilantro (optional)

Instructions

  1. Whisk together the soy sauce, shaoxing wine, oyster sauce, and sriracha in a bowl and set aside.
  2. Preheat a skillet with 1 Tbsp of olive oil over medium-high heat.
  3. Add shrimp and salt, cooking for about 1 minute per side until opaque. Transfer to a plate.
  4. In the same skillet, add the remaining olive oil, carrots, and sauté for 2 minutes.
  5. Add bell pepper and the white/light portion of green onions, sauté for another 2 minutes.
  6. Toss in garlic and ginger, sautéing for an additional 30 seconds.
  7. Move the mixture to one side of the skillet, drizzle sesame oil on the empty side, and add the rice, spreading it evenly. Let it cook for about 3 minutes, tossing occasionally.
  8. Add the sauce mixture and peas, cooking for 1 more minute.
  9. Scoot the mixture to one side, add the eggs and salt, scrambling until barely cooked through.
  10. Return the shrimp to the skillet, add green onion greens and cilantro, and toss everything together. Serve warm.
