Shrimp Fried Rice

The rice

leftover steamed rice, chilled in fridge overnight
The main ingredients

shrimp, shelled and deveined

frozen mixed vegetables, defrosted

Instructions
- Defrost the rice and break up any lumps.
- Heat 1 tablespoon of oil in a wok or skillet over high heat and add the eggs, breaking them into small pieces as they cook.
- Reheat the wok with the remaining oil and add the garlic, stir-frying until aromatic.
- Add the shrimp and cook until they begin to turn pink, then add the mixed vegetables.
- Stir quickly, then add the rice and stir-fry continuously.
- Add the soy sauce, oyster sauce, and pepper, and continue stir-frying until the shrimp are fully cooked and the rice is lightly toasted.
- Add the cooked eggs and stir to combine thoroughly.
- Serve immediately.
