Shrimp Fried Rice

Ingredients

The rice

  • 3 cups leftover steamed rice, chilled in fridge overnight

The main ingredients

  • 8 oz shrimp, shelled and deveined
  • 2 large eggs, lightly beaten
  • 1 cup frozen mixed vegetables, defrosted

The seasonings

  • 3 tablespoons oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 3 dashes ground white pepper, or black pepper
  • to taste salt

Instructions

  1. Defrost the rice and break up any lumps.
  2. Heat 1 tablespoon of oil in a wok or skillet over high heat and add the eggs, breaking them into small pieces as they cook.
  3. Reheat the wok with the remaining oil and add the garlic, stir-frying until aromatic.
  4. Add the shrimp and cook until they begin to turn pink, then add the mixed vegetables.
  5. Stir quickly, then add the rice and stir-fry continuously.
  6. Add the soy sauce, oyster sauce, and pepper, and continue stir-frying until the shrimp are fully cooked and the rice is lightly toasted.
  7. Add the cooked eggs and stir to combine thoroughly.
  8. Serve immediately.
