Shrimp Fried Rice

Instructions
- Heat 2 teaspoons of oil in a large pan over medium-high heat and season the shrimp with salt and pepper.
- Cook the shrimp in a single layer for 2-3 minutes per side until pink and opaque, then remove from the pan and keep warm.
- Add 1 teaspoon of oil to the pan, then add the onion and carrots, cooking for 3-5 minutes until softened.
- Stir in the garlic and cook for 30 seconds, then remove the vegetables from the pan and keep warm.
- Add the remaining teaspoon of oil to the pan, pour in the eggs, and scramble until cooked through, seasoning with salt and pepper.
- Stir in the cooked rice, shrimp, reserved vegetables, and peas, then add soy sauce and sesame oil, mixing until combined and warmed through.
- Top with sliced green onions and serve.
