Ingredients

The main ingredients

  • ¾ pound shrimp, peeled and deveined
  • 3 cups cooked white rice, long grain
  • 2 eggs lightly beaten

The vegetables

  • ½ cup onion, finely chopped
  • ½ cup carrots, peeled and coarsely chopped
  • ½ cup frozen peas, thawed
  • 2 teaspoons minced garlic
  • ¼ cup green onions, sliced

The seasonings and oils

  • 4 teaspoons vegetable oil, divided use
  • 3 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil
  • to taste salt and pepper

Instructions

  1. Heat 2 teaspoons of oil in a large pan over medium-high heat and season the shrimp with salt and pepper.
  2. Cook the shrimp in a single layer for 2-3 minutes per side until pink and opaque, then remove from the pan and keep warm.
  3. Add 1 teaspoon of oil to the pan, then add the onion and carrots, cooking for 3-5 minutes until softened.
  4. Stir in the garlic and cook for 30 seconds, then remove the vegetables from the pan and keep warm.
  5. Add the remaining teaspoon of oil to the pan, pour in the eggs, and scramble until cooked through, seasoning with salt and pepper.
  6. Stir in the cooked rice, shrimp, reserved vegetables, and peas, then add soy sauce and sesame oil, mixing until combined and warmed through.
  7. Top with sliced green onions and serve.
