Instructions
- Whisk together the sauce ingredients and set aside.
- Cook the eggs in a skillet, then transfer them to a plate.
- Sauté the carrots and onion until nearly tender, then add garlic and ginger.
- Fry the rice in the skillet, stirring occasionally.
- Add the ham and peas, and fry for an additional minute.
- Return the eggs to the skillet, drizzle in the sauce, and cook for one more minute.
- Stir in green onions if using and serve warm.
