Ingredients

The rice and sauces

  • 4 cups cooked jasmine rice
  • 1 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1 ½ tsp sesame oil
  • 1 tsp sriracha

The eggs and oil

  • 3 large eggs
  • 3 ½ Tbsp light olive oil or vegetable oil

The vegetables

  • ¾ cup small diced carrots
  • cup finely chopped yellow onion
  • 1 Tbsp minced garlic
  • 1 ½ tsp peeled and minced fresh ginger
  • ¾ cup frozen peas
  • ¼ cup chopped green onions

The protein

  • 1 cup small diced ham

Instructions

  1. Whisk together the sauce ingredients and set aside.
  2. Cook the eggs in a skillet, then transfer them to a plate.
  3. Sauté the carrots and onion until nearly tender, then add garlic and ginger.
  4. Fry the rice in the skillet, stirring occasionally.
  5. Add the ham and peas, and fry for an additional minute.
  6. Return the eggs to the skillet, drizzle in the sauce, and cook for one more minute.
  7. Stir in green onions if using and serve warm.
