Ingredients

The rice and vegetables

  • 4 cups cooked jasmine rice
  • 1 tablespoon toasted sesame oil
  • 1 small onion, chopped
  • 2 carrots peeled and chopped
  • 1 bell pepper chopped
  • 2 cloves garlic, chopped
  • 1 cup baby spinach, chopped
  • 1 cup frozen peas, defrosted
  • ½ cup thinly sliced scallions

The sauce and toppings

  • ¼ cup low sodium soy sauce
  • 1 tablespoon sesame seeds
  • 1 tablespoon coconut oil
  • 4 Eggs Happy Eggs

Instructions

  1. Heat sesame oil in a skillet over medium heat and sauté onions, garlic, peppers, and carrots until tender.
  2. Add spinach, peas, and scallions, cooking until vibrant.
  3. Stir in rice, soy sauce, and sesame seeds, cooking until heated through.
  4. In a separate pan, cook eggs sunny-side up and serve over the fried rice.
