Double Veggie Fried Rice

The eggs and sauces

Low Sodium Soy Sauce

Sesame Oil

The cooking oil

Avocado Oil (or vegetable/canola oil)
Instructions
- Heat a skillet over medium-high heat and add the oil, allowing it to get hot.
- Add the rice and all the vegetables except scallions, stir-frying and pressing the mixture into the skillet to brown.
- Once cooked through, push the rice mixture to the sides of the skillet and drizzle in the sesame oil.
- Crack the eggs over the sesame oil and scramble them, mixing them with the rice once set.
- Add the soy sauce, stir again, and serve garnished with scallions and sesame seeds.
