Double Veggie Fried Rice

Ingredients

The rice and vegetables

  • 2 cup Jasmine or Brown Rice, Cooked and Cooled
  • 1 cup Chopped Broccoli
  • 1 cup Frozen Peas
  • 1 cup Frozen Carrots
  • 1 cup Frozen Corn
  • 1 cup Scallions, sliced white and green parts

The eggs and sauces

  • 4 large Eggs (optional)
  • 4 tbsp Low Sodium Soy Sauce
  • 3 tsp Sesame Oil
  • to taste Sesame Seeds (for garnish)

The cooking oil

  • 2 tbsp Avocado Oil (or vegetable/canola oil)

Instructions

  1. Heat a skillet over medium-high heat and add the oil, allowing it to get hot.
  2. Add the rice and all the vegetables except scallions, stir-frying and pressing the mixture into the skillet to brown.
  3. Once cooked through, push the rice mixture to the sides of the skillet and drizzle in the sesame oil.
  4. Crack the eggs over the sesame oil and scramble them, mixing them with the rice once set.
  5. Add the soy sauce, stir again, and serve garnished with scallions and sesame seeds.
