Veg Fried Rice

The vegetables

peeled and minced fresh ginger

small diced broccoli florets

small diced red bell pepper

frozen petite peas, thawed and drained

The sauce and oil

The eggs
Instructions
- Heat oil in a large non-stick wok or deep skillet over medium-high heat.
- Add carrots, onions, garlic, and ginger, and sauté for 3 minutes.
- Add broccoli and bell pepper, sautéing until the veggies are soft, about 3-4 minutes.
- Move the veggies to one side of the pan and crack the eggs into the opposite side, scrambling them until cooked through.
- Stir in the rice, peas, corn, soy sauce, and sesame oil, cooking and tossing for 2 minutes.
- Serve warm.
