Veg Fried Rice

Ingredients

The rice

  • 3 cups cooked and chilled brown rice

The vegetables

  • 1 cup diced carrots
  • 1 cup chopped yellow onions
  • 4 cloves garlic, minced
  • 1 Tbsp peeled and minced fresh ginger
  • cups small diced broccoli florets
  • ¾ cup small diced red bell pepper
  • ¾ cup frozen petite peas, thawed and drained
  • ¾ cup frozen petite corn, thawed and drained

The sauce and oil

  • 2 Tbsp canola oil
  • 3-4 Tbsp soy sauce, to taste
  • 1 Tbsp sesame oil

The eggs

  • 4 large eggs

Instructions

  1. Heat oil in a large non-stick wok or deep skillet over medium-high heat.
  2. Add carrots, onions, garlic, and ginger, and sauté for 3 minutes.
  3. Add broccoli and bell pepper, sautéing until the veggies are soft, about 3-4 minutes.
  4. Move the veggies to one side of the pan and crack the eggs into the opposite side, scrambling them until cooked through.
  5. Stir in the rice, peas, corn, soy sauce, and sesame oil, cooking and tossing for 2 minutes.
  6. Serve warm.
