Extra Vegetable Fried Rice

Ingredients

The base

  • 2 large eggs
  • 2 cups cooked brown rice

The vegetables

  • 1 small white onion
  • 2 medium carrots
  • 2 cups additional veggies
  • 1 cup greens (optional)
  • 3 stalks green onions

The seasonings

  • teaspoons avocado oil or safflower oil
  • 1 tablespoon reduced-sodium tamari or soy sauce
  • 1 teaspoon toasted sesame oil
  • ¼ teaspoon salt
  • 1 tablespoon grated or finely minced fresh ginger
  • 2 cloves garlic
  • a pinch red pepper flakes

Instructions

  1. Prep all ingredients and have them ready near the stove.
  2. Heat a skillet over medium-high heat and add oil.
  3. Scramble the eggs in the skillet, then transfer to a bowl.
  4. In the same skillet, add more oil and sauté onion and carrots until tender.
  5. Add additional veggies and salt, cooking until they turn golden.
  6. Combine the cooked veggies with the scrambled eggs in the bowl.
  7. Return the skillet to heat, add ginger, garlic, and red pepper flakes.
  8. Stir in the rice and cook until hot and slightly golden.
  9. Add greens and green onions, then mix in the cooked veggies and eggs.
  10. Stir in tamari and sesame oil, adjust seasoning if needed.
  11. Serve immediately, optionally with chili-garlic sauce or sriracha.
