Extra Vegetable Fried Rice

Instructions
- Prep all ingredients and have them ready near the stove.
- Heat a skillet over medium-high heat and add oil.
- Scramble the eggs in the skillet, then transfer to a bowl.
- In the same skillet, add more oil and sauté onion and carrots until tender.
- Add additional veggies and salt, cooking until they turn golden.
- Combine the cooked veggies with the scrambled eggs in the bowl.
- Return the skillet to heat, add ginger, garlic, and red pepper flakes.
- Stir in the rice and cook until hot and slightly golden.
- Add greens and green onions, then mix in the cooked veggies and eggs.
- Stir in tamari and sesame oil, adjust seasoning if needed.
- Serve immediately, optionally with chili-garlic sauce or sriracha.
