Vegetable Fried Rice

Instructions
- Beat the eggs with a splash of water and set aside.
- Scramble the eggs in a lightly greased pan and set aside.
- In the same pan, heat 2 teaspoons of sesame oil and sauté the onions and carrots until softened.
- Add garlic and cook until fragrant.
- Stir in the cold rice and peas, cooking for a few minutes.
- Mix soy sauce, oyster sauce, ground ginger, and remaining sesame oil, then pour over the rice.
- Add the scrambled eggs and stir until heated through, seasoning with salt and pepper to taste.
