Vegetable Fried Rice

Ingredients

The base

  • 4 cups cooked long grain brown rice
  • 3 large eggs
  • 1 cup frozen peas

The vegetables

  • 1 small onion, chopped
  • 1 cup diced carrots
  • 3 cloves garlic, minced

The sauces

  • 3 teaspoons sesame oil
  • 3 tablespoons low sodium soy sauce
  • 1 tablespoon oyster sauce

Spices

  • ¼ teaspoon ground ginger
  • to taste salt
  • to taste black pepper

Instructions

  1. Beat the eggs with a splash of water and set aside.
  2. Scramble the eggs in a lightly greased pan and set aside.
  3. In the same pan, heat 2 teaspoons of sesame oil and sauté the onions and carrots until softened.
  4. Add garlic and cook until fragrant.
  5. Stir in the cold rice and peas, cooking for a few minutes.
  6. Mix soy sauce, oyster sauce, ground ginger, and remaining sesame oil, then pour over the rice.
  7. Add the scrambled eggs and stir until heated through, seasoning with salt and pepper to taste.
