Egg Fried Rice

Instructions
- Break up clumpy rice if necessary.
- Heat oil in a large wok or skillet over medium-high heat.
- Add rice and soy sauce, stirring for about a minute.
- Incorporate oyster sauce and stir until mixed.
- Move rice to one side of the pan and add beaten eggs, stirring to break them apart.
- Mix eggs and rice together for about a minute, then set aside.
- Add more oil to the pan and heat it up.
- Stir in onions and garlic, then add mixed vegetables.
- Return the rice to the pan and mix everything together.
- Adjust seasoning with salt, pepper, and soy sauce as needed.
- Garnish with chopped scallion and serve.
