Ingredients

The rice and sauces

  • 4 cups cooked rice
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce

The proteins and vegetables

  • 4 large eggs
  • ½ medium onion
  • 2 teaspoons minced garlic
  • 1⅓ cups frozen mixed vegetables
  • 1 piece green onion

The seasonings

  • 3-4 tablespoons cooking oil
  • 1 teaspoon pepper flakes
  • to taste salt and pepper

Instructions

  1. Break up clumpy rice if necessary.
  2. Heat oil in a large wok or skillet over medium-high heat.
  3. Add rice and soy sauce, stirring for about a minute.
  4. Incorporate oyster sauce and stir until mixed.
  5. Move rice to one side of the pan and add beaten eggs, stirring to break them apart.
  6. Mix eggs and rice together for about a minute, then set aside.
  7. Add more oil to the pan and heat it up.
  8. Stir in onions and garlic, then add mixed vegetables.
  9. Return the rice to the pan and mix everything together.
  10. Adjust seasoning with salt, pepper, and soy sauce as needed.
  11. Garnish with chopped scallion and serve.
