Easy Fried Rice

The rice

Instructions
- Cook the rice by bringing it to a boil with water, then simmer on low until water is absorbed.
- Heat olive oil in a skillet and sauté the red onion for a few minutes, then add garlic and red pepper.
- Add the frozen vegetables and sauté until cooked but not mushy.
- Create a pocket in the pan, scramble the eggs, and mix with the vegetables once cooked.
- Add the cooked rice, soy sauce, and rice vinegar to the pan, mixing everything together and cooking for a few more minutes.
