Easy Fried Rice

Ingredients

The rice

  • 1 cup uncooked short-grain brown rice
  • cups water

The vegetables

  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 whole red pepper, finely diced
  • ½ red onion, finely diced
  • 2 cups frozen peas and carrots

The eggs

  • 2 large eggs

The sauce

  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar

Instructions

  1. Cook the rice by bringing it to a boil with water, then simmer on low until water is absorbed.
  2. Heat olive oil in a skillet and sauté the red onion for a few minutes, then add garlic and red pepper.
  3. Add the frozen vegetables and sauté until cooked but not mushy.
  4. Create a pocket in the pan, scramble the eggs, and mix with the vegetables once cooked.
  5. Add the cooked rice, soy sauce, and rice vinegar to the pan, mixing everything together and cooking for a few more minutes.
