Easy Fried Rice

Ingredients

The base

  • 3 cups Cooked white rice
  • 2 large Eggs

The vegetables

  • 1 cup Frozen peas and carrots
  • 2 cloves Garlic
  • 2 medium Green onions

The fats

  • 1 tbsp Olive oil
  • 3 tbsp Unsalted butter
  • 2 tsp Toasted sesame oil

The seasonings

  • 1/4 cup Coconut aminos or soy sauce
  • 1 tsp Sea salt
  • 1/2 tsp Black pepper

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add frozen peas and carrots, sauté for about 3 minutes until soft.
  3. Reduce heat and add minced garlic, sauté for about 30 seconds until fragrant.
  4. Push vegetables to the side, crack eggs into the skillet, and scramble until fully cooked.
  5. Add cooked rice, butter, and coconut aminos or soy sauce, mixing everything together and cooking until warm.
  6. Stir in toasted sesame oil, season with salt and pepper, and garnish with green onions if desired.
