Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add frozen peas and carrots, sauté for about 3 minutes until soft.
- Reduce heat and add minced garlic, sauté for about 30 seconds until fragrant.
- Push vegetables to the side, crack eggs into the skillet, and scramble until fully cooked.
- Add cooked rice, butter, and coconut aminos or soy sauce, mixing everything together and cooking until warm.
- Stir in toasted sesame oil, season with salt and pepper, and garnish with green onions if desired.
