Fried Rice
Ingredients
The base

cold, cooked white rice

frozen peas and carrots, defrosted

green onions, trimmed and thinly sliced

Instructions
- Heat canola and sesame oil in a large skillet over medium-high heat.
- Sauté half of the green onions and garlic for 2-3 minutes, then add the ham and cook for another 2-3 minutes.
- Add the peas and carrots, sauté for another minute, then set the mixture aside.
- In the same skillet, add the remaining oils and the cold rice, spreading it out and pressing down to crisp it up.
- Cook the rice without stirring for 3-4 minutes, then stir and repeat until crispy and golden brown.
- Add the soy sauce and the ham and veggie mixture to the rice, stirring to combine.
- In a separate skillet, melt the butter and scramble the eggs, then add them to the rice mixture.
- Top with remaining green onions and serve.
