Fried Rice

Ingredients

The base

  • 4 cups cold, cooked white rice
  • ½ tablespoon canola oil
  • 2 tablespoons toasted sesame oil

The mix-ins

  • 5 ounces thickly-sliced ham, diced
  • 1 cup frozen peas and carrots, defrosted
  • 8 pieces green onions, trimmed and thinly sliced
  • 2-3 cloves garlic, minced
  • 4 eggs eggs

The seasoning

  • 3 tablespoons soy sauce
  • 1 tablespoon butter

Instructions

  1. Heat canola and sesame oil in a large skillet over medium-high heat.
  2. Sauté half of the green onions and garlic for 2-3 minutes, then add the ham and cook for another 2-3 minutes.
  3. Add the peas and carrots, sauté for another minute, then set the mixture aside.
  4. In the same skillet, add the remaining oils and the cold rice, spreading it out and pressing down to crisp it up.
  5. Cook the rice without stirring for 3-4 minutes, then stir and repeat until crispy and golden brown.
  6. Add the soy sauce and the ham and veggie mixture to the rice, stirring to combine.
  7. In a separate skillet, melt the butter and scramble the eggs, then add them to the rice mixture.
  8. Top with remaining green onions and serve.
