Easy Ham Fried Rice

Ingredients

The base

  • 3 large eggs
  • 3 cups cooked cold rice
  • 1 to 2 cups diced leftover ham or deli ham
  • ½ to 1 cup frozen peas

The flavorings

  • 1 teaspoon sesame oil
  • 1 teaspoon olive oil
  • 2 cloves garlic, finely minced
  • 2 to 3 pieces green onions, finely chopped
  • 2 to 3 tablespoons soy sauce
  • Salt and pepper

Instructions

  1. Whisk the eggs with a pinch of salt and pepper.
  2. Heat sesame and olive oil in a skillet over medium heat and add the eggs, cooking until set.
  3. Scoot the eggs to the side and add garlic and white parts of green onions, cooking until fragrant.
  4. Add the cold rice, breaking it into clumps, and cook until sizzling.
  5. Incorporate the eggs back into the rice mixture.
  6. Add chopped ham and peas, stirring to combine.
  7. Add soy sauce and cook until everything is heated through.
  8. Serve immediately with additional soy sauce and green parts of the onion.
