Hawaiian Fried Rice

fresh pineapple, cut into ½-inch pieces
Instructions
- Whisk together soy sauce, sesame oil, and Sriracha in a small bowl and set aside.
- Heat 1 tablespoon of olive oil in a large nonstick skillet over medium-high heat until smoking, then add ham, bell pepper, onion, and scallion whites, cooking until softened and lightly browned.
- Stir in garlic and ginger, cooking until fragrant, then transfer the mixture to a plate.
- In the same skillet, heat another tablespoon of olive oil and add the cold rice, breaking up clumps and cooking until heated through.
- Push the rice to one side and add the remaining tablespoon of oil to the empty side, heating it before adding the eggs and cooking until set.
- Stir the eggs and reserved ham mixture into the rice, then add the soy sauce mixture and mix until evenly coated.
- Remove from heat, stir in the pineapple, and garnish with scallion greens.
