Hawaiian Fried Rice

Ingredients

The sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • to taste Sriracha

The fried rice

  • 3 tablespoons olive oil
  • 1 cup ham, chopped
  • 1 cup red bell pepper, cut into ½-inch pieces
  • 1 small onion, thinly sliced
  • 6 pieces scallions, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups cooked rice, cold
  • 2 large eggs
  • 2 cups fresh pineapple, cut into ½-inch pieces

Instructions

  1. Whisk together soy sauce, sesame oil, and Sriracha in a small bowl and set aside.
  2. Heat 1 tablespoon of olive oil in a large nonstick skillet over medium-high heat until smoking, then add ham, bell pepper, onion, and scallion whites, cooking until softened and lightly browned.
  3. Stir in garlic and ginger, cooking until fragrant, then transfer the mixture to a plate.
  4. In the same skillet, heat another tablespoon of olive oil and add the cold rice, breaking up clumps and cooking until heated through.
  5. Push the rice to one side and add the remaining tablespoon of oil to the empty side, heating it before adding the eggs and cooking until set.
  6. Stir the eggs and reserved ham mixture into the rice, then add the soy sauce mixture and mix until evenly coated.
  7. Remove from heat, stir in the pineapple, and garnish with scallion greens.
