Ingredients

  • 4 teaspoons extra-virgin olive oil
  • ½ cup chopped red onion
  • 1 large bunch green onions
  • 1 teaspoon minced garlic
  • 1 small red bell pepper
  • 4 cups leftover white or brown rice
  • 1 cup chopped fresh pineapple
  • 1 cup crumbled bacon or chopped ham
  • 3 tablespoons low-sodium soy sauce
  • 2 teaspoons brown sugar
  • ½ teaspoon ground ginger
  • 4-5 eggs eggs
  • to taste salt and pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add red onion, firm ends of green onions, garlic, and bell pepper; sauté until fragrant.
  3. Whisk together soy sauce, brown sugar, and ginger; set aside.
  4. Add rice to the skillet and stir until heated through.
  5. Incorporate bacon or ham and cook until heated.
  6. Add the soy sauce mixture, green tops of green onions, and pineapple; stir to combine.
  7. Season with salt and pepper, cover, and reduce heat to low to keep warm.
  8. Cook eggs in a separate pan as desired; scramble or fry.
  9. If scrambled, mix eggs into the rice before serving; if fried, serve rice topped with an egg.
