Instructions
- Heat olive oil in a large skillet over medium heat.
- Add red onion, firm ends of green onions, garlic, and bell pepper; sauté until fragrant.
- Whisk together soy sauce, brown sugar, and ginger; set aside.
- Add rice to the skillet and stir until heated through.
- Incorporate bacon or ham and cook until heated.
- Add the soy sauce mixture, green tops of green onions, and pineapple; stir to combine.
- Season with salt and pepper, cover, and reduce heat to low to keep warm.
- Cook eggs in a separate pan as desired; scramble or fry.
- If scrambled, mix eggs into the rice before serving; if fried, serve rice topped with an egg.
