Hawaiian Fried Rice

Ingredients

The rice

  • 1 ⅓ cups jasmine rice
  • 1 ¼ cups coconut milk
  • 1 ¼ cups coconut water or water
  • ¼ tsp salt

The oils

  • 1 ½ Tbsp olive oil
  • 1 tsp sesame oil

The vegetables and aromatics

  • 1 cup red bell pepper, diced
  • cup green onions, light portion, sliced
  • 2 tsp minced garlic
  • 2 tsp minced fresh ginger
  • ½ cup green onions, green portion, sliced
  • 3 Tbsp minced fresh cilantro

The proteins

  • 2 cups diced ham
  • 2 cups diced fresh pineapple
  • 3 large eggs

The seasoning

  • 1 Tbsp soy sauce

Instructions

  1. Bring coconut milk, coconut water, and salt to a boil in a medium saucepan.
  2. Add rice, cover, and reduce heat to low. Simmer until liquid is absorbed, about 15-18 minutes.
  3. Remove rice from heat and let it rest off heat for 10 minutes.
  4. Heat olive oil and sesame oil in a skillet over medium-high heat.
  5. Sauté bell pepper and light green onions until tender, about 4 minutes.
  6. Stir in garlic and ginger, then add ham and pineapple, cooking until heated through.
  7. Scoot ingredients to one side of the pan and add remaining oil.
  8. Scramble and cook the eggs on the empty side until just set.
  9. Add rice, green portion of green onions, cilantro, and drizzle with soy sauce. Toss to combine.
  10. Serve warm with sriracha if desired.
