Instructions
- Bring coconut milk, coconut water, and salt to a boil in a medium saucepan.
- Add rice, cover, and reduce heat to low. Simmer until liquid is absorbed, about 15-18 minutes.
- Remove rice from heat and let it rest off heat for 10 minutes.
- Heat olive oil and sesame oil in a skillet over medium-high heat.
- Sauté bell pepper and light green onions until tender, about 4 minutes.
- Stir in garlic and ginger, then add ham and pineapple, cooking until heated through.
- Scoot ingredients to one side of the pan and add remaining oil.
- Scramble and cook the eggs on the empty side until just set.
- Add rice, green portion of green onions, cilantro, and drizzle with soy sauce. Toss to combine.
- Serve warm with sriracha if desired.
