Instructions
- Heat oil in a large skillet or wok over medium-high heat until shimmering.
- Add peas, carrots, and onions; cook until softened, about 3 minutes.
- Stir in the rice, then clear a space in the middle of the pan.
- Crack the egg into the space and scramble until hardened, about 1 minute, then mix it with the rice and vegetables.
- Pour soy sauce over the rice and sprinkle with garlic powder; toss to combine and heat through.
- Taste and adjust seasonings with more soy sauce and garlic powder if desired, then serve immediately.
