Ingredients

  • 1 tablespoon olive oil
  • 1 cup frozen peas and carrots mix
  • ½ cup frozen chopped onions
  • 2 cups cooked brown rice
  • 1 large egg
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder

Instructions

  1. Heat oil in a large skillet or wok over medium-high heat until shimmering.
  2. Add peas, carrots, and onions; cook until softened, about 3 minutes.
  3. Stir in the rice, then clear a space in the middle of the pan.
  4. Crack the egg into the space and scramble until hardened, about 1 minute, then mix it with the rice and vegetables.
  5. Pour soy sauce over the rice and sprinkle with garlic powder; toss to combine and heat through.
  6. Taste and adjust seasonings with more soy sauce and garlic powder if desired, then serve immediately.
