Chicken Fried Rice

Instructions
- Heat 2 teaspoons of oil in a large pan over medium-high heat and season the chicken with salt and pepper.
- Cook the chicken in a single layer for 4-5 minutes until browned and cooked through, then remove and keep warm.
- Add 1 teaspoon of oil to the pan, then add the onion and carrots, cooking for 4-5 minutes until softened.
- Add the garlic and cook for an additional 30 seconds, then remove the vegetables and keep warm.
- Pour the remaining oil into the pan, add the eggs, and scramble until cooked through.
- Add the rice, chicken, reserved veggies, and peas to the pan, stirring in soy sauce and sesame oil until combined and heated through.
- Sprinkle green onions on top and serve.
