Chicken Fried Rice

Ingredients

  • 4 teaspoons vegetable oil
  • ¾ pound boneless skinless chicken breasts
  • ½ cup onion
  • ½ cup carrots
  • ½ cup frozen peas
  • 2 teaspoons minced garlic
  • 2 eggs lightly beaten
  • 3 cups cooked white rice
  • 3 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil
  • to taste salt
  • to taste black pepper
  • ¼ cup green onions

Instructions

  1. Heat 2 teaspoons of oil in a large pan over medium-high heat and season the chicken with salt and pepper.
  2. Cook the chicken in a single layer for 4-5 minutes until browned and cooked through, then remove and keep warm.
  3. Add 1 teaspoon of oil to the pan, then add the onion and carrots, cooking for 4-5 minutes until softened.
  4. Add the garlic and cook for an additional 30 seconds, then remove the vegetables and keep warm.
  5. Pour the remaining oil into the pan, add the eggs, and scramble until cooked through.
  6. Add the rice, chicken, reserved veggies, and peas to the pan, stirring in soy sauce and sesame oil until combined and heated through.
  7. Sprinkle green onions on top and serve.
