Chicken Fried Rice

Ingredients

  • 1 Tbsp. vegetable oil
  • ¼ cup finely diced carrot
  • ½ cup chopped scallions
  • 2 Tbsp. minced shallots
  • 1 Tbsp. unsalted butter
  • 2 cloves garlic
  • ½ tsp. crushed red pepper
  • ¼ cup peas
  • 1 tsp. minced ginger
  • 3 cups cooked rice
  • 1 Tbsp. soy sauce
  • 1 Tbsp. sesame oil
  • 1 cup shredded, cooked chicken
  • 2 eggs eggs
  • to taste salt
  • to taste pepper

Instructions

  1. Heat a large sauté pan over medium-high heat and add vegetable oil.
  2. Add carrots and half of the scallions, cooking for 2-3 minutes.
  3. Add shallots and cook for an additional 1-2 minutes.
  4. Incorporate half of the butter, crushed red pepper, and peas, cooking for 1 minute.
  5. Add ginger and garlic, cooking for an additional 1-2 minutes, avoiding burning the garlic.
  6. Stir in the cooked rice and mix with the vegetables.
  7. Pour in soy sauce, sesame oil, and add the remaining butter, cooking for 3-4 minutes while stirring.
  8. Mix in the shredded chicken and push the fried rice to one side of the pan.
  9. In a separate bowl, beat the eggs with salt and pepper, then pour into the empty side of the pan and scramble.
  10. Combine the scrambled eggs with the fried rice, season to taste, and garnish with remaining scallions before serving.
