Chicken Fried Rice

Instructions
- Heat a large sauté pan over medium-high heat and add vegetable oil.
- Add carrots and half of the scallions, cooking for 2-3 minutes.
- Add shallots and cook for an additional 1-2 minutes.
- Incorporate half of the butter, crushed red pepper, and peas, cooking for 1 minute.
- Add ginger and garlic, cooking for an additional 1-2 minutes, avoiding burning the garlic.
- Stir in the cooked rice and mix with the vegetables.
- Pour in soy sauce, sesame oil, and add the remaining butter, cooking for 3-4 minutes while stirring.
- Mix in the shredded chicken and push the fried rice to one side of the pan.
- In a separate bowl, beat the eggs with salt and pepper, then pour into the empty side of the pan and scramble.
- Combine the scrambled eggs with the fried rice, season to taste, and garnish with remaining scallions before serving.
