The main ingredients

  • 3 tablespoons olive oil
  • 1 lb boneless, skinless chicken breast
  • 2 teaspoons garlic powder
  • 2 teaspoons soy sauce
  • 1 teaspoon minced garlic
  • 8 small green onions
  • 3 small carrots
  • 4 cups cooked chilled white rice
  • 1 large red pepper
  • 1 cup frozen peas
  • 3 large eggs

The sauce

  • ¼ cup soy sauce
  • 1 teaspoon maple syrup
  • 2 teaspoons rice vinegar
  • ¼ teaspoon fish sauce
  • 1 teaspoon minced garlic

Instructions

  1. Prepare the fried rice sauce by mixing all sauce ingredients together and set aside.
  2. In a large frying pan, heat 2 tablespoons of olive oil over medium/high heat, then cook the chicken with garlic powder and soy sauce until fully cooked.
  3. Remove the chicken from the pan, keeping the oil and liquid in the pan.
  4. Add another tablespoon of olive oil, then sauté the white parts of green onions and minced carrots for 2-3 minutes.
  5. Add the chilled white rice and sauté for another 2-3 minutes.
  6. Add the red pepper and frozen peas, sautéing for another 2-3 minutes.
  7. Return the cooked chicken to the pan, add the fried rice sauce, and cook for an additional 3-4 minutes.
  8. Create a well in the center of the pan, crack in the eggs, and scramble them with soy sauce until fully cooked.
  9. Mix everything together and serve with the green parts of the green onions.
