Veggie Fried Rice

Ingredients

The base

  • 2 cups cooked rice
  • 2 large eggs

The vegetables

  • 1 tablespoon olive oil
  • 1 yellow onion chopped
  • 2 carrots chopped
  • 3 cups shredded cabbage
  • 3 cloves garlic
  • 1 inch fresh ginger
  • 2 green onions chopped

The seasonings

  • ½ teaspoon fine sea salt
  • 2 tablespoons tamari
  • 1 teaspoon toasted sesame oil
  • to taste black pepper

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat and sauté the onion, carrots, cabbage, and salt until tender, about 8 minutes.
  2. Add garlic and ginger, stirring for 1 more minute.
  3. Create a well in the center of the pan and scramble the eggs until cooked through, about 3 to 4 minutes.
  4. Add the chilled rice and tamari, stirring until the rice is heated through.
  5. Finish by adding sesame oil, green onions, and black pepper to taste, then serve warm.
