Easy Vegan Fried Rice

Ingredients

The base

  • 4 cups cooked rice
  • 1 cup chopped yellow or sweet onion
  • 2 cloves garlic, finely chopped
  • 1 cup chopped carrots
  • 1 cup frozen peas
  • 1 cup chopped red pepper

The seasonings

  • 2 teaspoons sesame oil
  • ¼ cup Tamari or soy sauce
  • 1 tablespoon apple cider vinegar
  • ½ cup sliced green onion, for garnish
  • to taste black pepper (optional)

Optional ingredients

  • equivalent to 3 eggs vegan egg

Instructions

  1. Sauté the onion and garlic in sesame oil or broth over medium heat until slightly brown.
  2. Add the carrots, peas, and red pepper, and sauté until they start to brown.
  3. If using vegan egg, push the veggies to the side and scramble the egg on the other side of the pan.
  4. Stir in the cooked rice, Tamari or soy sauce, and vinegar, mixing everything together.
  5. Increase the heat and cook while stirring until the rice is browning and crispy at the edges.
  6. Garnish with green onion and black pepper, then serve.
