Easy Vegan Fried Rice

sesame seeds

Instructions
- Heat sesame oil in a large skillet over high heat until hot.
- Add thawed vegetables (edamame, peas, carrots, peppers) and cook for 2-3 minutes until tender but still crisp.
- Add cold white rice and drizzle with soy sauce, nutritional yeast, and garlic chili sauce, stirring to combine.
- Continue cooking over high heat, turning the rice until it is golden brown and fried.
- If the rice sticks, drizzle with additional sesame oil.
- Just before serving, add sesame seeds and fry for an additional minute.
- Remove from heat and sprinkle with fresh green onions and torn seaweed sheets.
- Taste and adjust with black pepper and more soy sauce or nutritional yeast if desired.
