Easy Vegan Fried Rice

Ingredients

The rice

  • 2 cups cold white rice

The vegetables

  • 1 and ½ cups frozen edamame
  • 1 cup frozen peas
  • 1 cup grated or shredded carrots
  • 1 medium red or green bell pepper
  • ½ cup sliced green onions
  • 3-4 small sheets roasted seaweed (optional)

The flavorings

  • 1 tablespoon sesame oil
  • 3 tablespoons soy sauce
  • 2 tablespoons nutritional yeast
  • 1 tablespoon garlic chili sauce
  • 1 tablespoon sesame seeds
  • to taste freshly ground black pepper

Instructions

  1. Heat sesame oil in a large skillet over high heat until hot.
  2. Add thawed vegetables (edamame, peas, carrots, peppers) and cook for 2-3 minutes until tender but still crisp.
  3. Add cold white rice and drizzle with soy sauce, nutritional yeast, and garlic chili sauce, stirring to combine.
  4. Continue cooking over high heat, turning the rice until it is golden brown and fried.
  5. If the rice sticks, drizzle with additional sesame oil.
  6. Just before serving, add sesame seeds and fry for an additional minute.
  7. Remove from heat and sprinkle with fresh green onions and torn seaweed sheets.
  8. Taste and adjust with black pepper and more soy sauce or nutritional yeast if desired.
