Vegan Fried Rice

The rice and vegetables

leftover brown rice

green onions, sliced into 1-inch pieces

pineapple chunks (canned, fresh, or frozen)

fresh or frozen edamame, thawed

braised or marinated tofu, cubed

raw cashew pieces
The sauce

tablespoons
avocado oil (or any other cooking oil)

tablespoons
tamari or soy sauce

tablespoon
sriracha (optional)
Instructions
- Preheat the oven to 325ºF.
- Combine the rice, green onions, pineapple, edamame, tofu, and cashews on a sheet pan.
- In a small bowl, whisk together the oil, soy sauce, and sriracha, then pour this mixture over the rice mixture and toss to coat.
- Bake the rice for 45-60 minutes, stirring every 20 minutes, until the rice is mostly dry and beginning to get crispy near the edges.
- Serve with additional soy sauce and sriracha if desired.
