Vegan Baked Fried Rice

Ingredients

The rice mixture

  • 4 cups cold leftover brown rice
  • 1 bunch green onions, sliced into ½-inch pieces
  • 1 cup pineapple chunks
  • 1 cup frozen edamame, thawed
  • ½ cup raw cashew pieces

The sauce

  • 2 tablespoons coconut oil, melted
  • 3 tablespoons soy sauce
  • 1 tablespoon sriracha

Instructions

  1. Preheat the oven to 325°F.
  2. In a large bowl, combine the rice, green onions, pineapple, edamame, and cashews.
  3. In a small bowl, whisk together the melted oil, soy sauce, and sriracha.
  4. Pour the oil mixture over the rice mixture and stir until well combined.
  5. Spray a rimmed baking sheet with oil or cooking spray.
  6. Pour the rice mixture onto the sheet in an even layer.
  7. Bake for 45-60 minutes, stirring about every 20 minutes, until the rice is dry and beginning to get crispy.
  8. Serve with additional soy sauce and sriracha if desired.
