Vegan Baked Fried Rice

Ingredients
The rice mixture

cups
cold leftover brown rice
1
bunch
green onions, sliced into ½-inch pieces
1
cup
pineapple chunks
1
cup
frozen edamame, thawed
½
cup
raw cashew pieces
The sauce
2
tablespoons
coconut oil, melted
3
tablespoons
soy sauce
1
tablespoon
sriracha
Instructions
Preheat the oven to 325°F.
In a large bowl, combine the rice, green onions, pineapple, edamame, and cashews.
In a small bowl, whisk together the melted oil, soy sauce, and sriracha.
Pour the oil mixture over the rice mixture and stir until well combined.
Spray a rimmed baking sheet with oil or cooking spray.
Pour the rice mixture onto the sheet in an even layer.
Bake for 45-60 minutes, stirring about every 20 minutes, until the rice is dry and beginning to get crispy.
Serve with additional soy sauce and sriracha if desired.
