Ingredients

The base

  • 1 large cauliflower

The vegetables

  • 2 cloves garlic, chopped finely
  • 1 large onion, chopped finely
  • 1 teaspoon ginger
  • ¼ cup carrots, chopped finely
  • ½ large bell pepper, chopped
  • 1 cup frozen peas

The oils and sauces

  • 1 tablespoon oil
  • 1 tablespoon sesame oil
  • ¼ cup soy sauce

The protein

  • 2 large eggs, whisked

Instructions

  1. Make the cauliflower rice by pulsing chopped cauliflower florets in a blender or food processor until rice-like.
  2. In a large wok or skillet, heat oil over medium heat, then add garlic and ginger, frying for 1-2 minutes.
  3. Add the carrots, bell pepper, peas, and riced cauliflower, cooking for 3-4 minutes until softened.
  4. Push the veggies to one side, add sesame oil, and scramble the eggs on the other side, then mix everything together.
  5. Stir in the soy sauce and stir-fry for another 1-2 minutes before serving.
