Instructions
- Make the cauliflower rice by pulsing chopped cauliflower florets in a blender or food processor until rice-like.
- In a large wok or skillet, heat oil over medium heat, then add garlic and ginger, frying for 1-2 minutes.
- Add the carrots, bell pepper, peas, and riced cauliflower, cooking for 3-4 minutes until softened.
- Push the veggies to one side, add sesame oil, and scramble the eggs on the other side, then mix everything together.
- Stir in the soy sauce and stir-fry for another 1-2 minutes before serving.
