Cauliflower Fried Rice

Instructions
- Heat 2 teaspoons of vegetable oil in a skillet over medium-high heat.
- Add the onion and carrot, cooking until softened, about 3-5 minutes.
- Stir in the garlic and cook for an additional 30 seconds, then season with salt and pepper.
- Remove the vegetables from the pan and keep warm.
- Add the remaining teaspoon of oil to the pan and scramble the eggs until cooked through, seasoning with salt and pepper.
- Stir in the cauliflower rice, reserved veggies, and frozen peas, then add soy sauce and sesame oil.
- Cook until the cauliflower is just softened, about 4-5 minutes.
- Serve immediately, garnished with sliced green onions.
