Cauliflower Fried Rice

Ingredients

  • cups riced cauliflower
  • 2 tablespoons vegetable oil
  • ½ cup finely chopped onion
  • ½ cup chopped carrots
  • ½ cup frozen peas
  • 1 teaspoon minced garlic
  • 2 eggs lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil
  • to taste salt and pepper
  • 2 tablespoons sliced green onions

Instructions

  1. Heat 2 teaspoons of vegetable oil in a skillet over medium-high heat.
  2. Add the onion and carrot, cooking until softened, about 3-5 minutes.
  3. Stir in the garlic and cook for an additional 30 seconds, then season with salt and pepper.
  4. Remove the vegetables from the pan and keep warm.
  5. Add the remaining teaspoon of oil to the pan and scramble the eggs until cooked through, seasoning with salt and pepper.
  6. Stir in the cauliflower rice, reserved veggies, and frozen peas, then add soy sauce and sesame oil.
  7. Cook until the cauliflower is just softened, about 4-5 minutes.
  8. Serve immediately, garnished with sliced green onions.
