Healthy Cauliflower Fried Rice

Instructions
- Chop the cauliflower into florets and pulse in a food processor until it resembles rice.
- Heat a large skillet over medium-high heat and add sesame oil.
- Sauté the chopped onion, peas, and carrots until tender, about 2 to 3 minutes.
- In a small bowl, whisk together soy sauce, honey, garlic, ginger, and red pepper flakes.
- Slide the veggie mixture to one side of the skillet and scramble the beaten eggs on the other side until cooked, then mix with the veggies.
- Stir in the cauliflower rice and pour the sauce over everything, mixing well.
- Cook for an additional 3 to 4 minutes until the cauliflower is soft and tender, then top with green onions and serve.
