Ingredients

The base

  • 1 head cauliflower, chopped into florets (or 4 cups riced cauliflower)

The vegetables

  • 1 small onion, finely chopped
  • ½ cup fresh or frozen peas
  • ½ cup carrots, cubed
  • 2 Tbsp green onions, chopped

The protein

  • 2 eggs lightly beaten

The sauce

  • 1 Tbsp sesame oil
  • ¼ cup low sodium soy sauce
  • 1 Tbsp honey
  • 2 cloves garlic, minced
  • ¼ tsp fresh grated ginger (or ⅛ tsp ground ginger)
  • ¼ tsp red pepper flakes

Instructions

  1. Chop the cauliflower into florets and pulse in a food processor until it resembles rice.
  2. Heat a large skillet over medium-high heat and add sesame oil.
  3. Sauté the chopped onion, peas, and carrots until tender, about 2 to 3 minutes.
  4. In a small bowl, whisk together soy sauce, honey, garlic, ginger, and red pepper flakes.
  5. Slide the veggie mixture to one side of the skillet and scramble the beaten eggs on the other side until cooked, then mix with the veggies.
  6. Stir in the cauliflower rice and pour the sauce over everything, mixing well.
  7. Cook for an additional 3 to 4 minutes until the cauliflower is soft and tender, then top with green onions and serve.
