Instructions
- Whisk together the eggs and egg whites, then scramble them in a nonstick pan and set aside.

- Add the frozen vegetables, red bell pepper, cauliflower rice, and soy sauce to the skillet, cover, and cook until the rice is tender.
- Stir in the scrambled eggs and top with green onions before serving.
