Easy Cauliflower Fried Rice

Ingredients

The base

  • 4-5 cups cauliflower rice
  • 2 cups frozen mixed vegetables
  • ½ cup red bell pepper, chopped

The eggs

  • 2 large eggs
  • ½ cup egg whites

The flavorings

  • 2 teaspoons sesame oil
  • ½ medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 teaspoon grated ginger
  • 3-4 tablespoons soy sauce
  • 5 stalks green onions, minced

Instructions

  1. Whisk together the eggs and egg whites, then scramble them in a nonstick pan and set aside.
  2. In a large skillet, heat sesame oil and sauté the onion, garlic, and ginger until the onions are tender.
  3. Add the frozen vegetables, red bell pepper, cauliflower rice, and soy sauce to the skillet, cover, and cook until the rice is tender.
  4. Stir in the scrambled eggs and top with green onions before serving.
