Cauliflower Fried Rice

Ingredients

The base

  • 1 medium head cauliflower

The eggs

  • 2 egg whites egg whites
  • 1 large egg

The aromatics and vegetables

  • ½ small onion
  • ½ cup frozen peas and carrots
  • 2 cloves garlic
  • 5 stalks scallions

The seasoning

  • 1 tbsp sesame oil
  • 1 pinch salt
  • 3 tbsp soy sauce

The cooking aid

  • as needed spray cooking spray

Instructions

  1. Remove the core from the cauliflower and let it dry completely.
  2. Coarsely chop the cauliflower into florets and pulse in a food processor until it resembles rice.
  3. In a bowl, combine the egg and egg whites, beat, and season with salt.
  4. Heat a large sauté pan or wok over medium heat and spray with cooking spray.
  5. Add the eggs to the pan and cook until set, then set aside.
  6. Add sesame oil to the pan and sauté onions, scallion whites, peas, carrots, and garlic until soft.
  7. Increase heat to medium-high and add the cauliflower rice and soy sauce, mixing well.
  8. Cover and cook for about 5 to 6 minutes, stirring frequently until the cauliflower is tender.
  9. Add the cooked eggs back into the pan and mix in the scallion greens before serving.
