Cauliflower Fried Rice

Instructions
- Remove the core from the cauliflower and let it dry completely.
- Coarsely chop the cauliflower into florets and pulse in a food processor until it resembles rice.
- In a bowl, combine the egg and egg whites, beat, and season with salt.
- Heat a large sauté pan or wok over medium heat and spray with cooking spray.
- Add the eggs to the pan and cook until set, then set aside.
- Add sesame oil to the pan and sauté onions, scallion whites, peas, carrots, and garlic until soft.
- Increase heat to medium-high and add the cauliflower rice and soy sauce, mixing well.
- Cover and cook for about 5 to 6 minutes, stirring frequently until the cauliflower is tender.
- Add the cooked eggs back into the pan and mix in the scallion greens before serving.
