Cauliflower Fried Rice

Instructions
- Rinse and rice the cauliflower using a food processor or box grater until it resembles rice.
- Heat olive oil in a skillet and sauté onion, carrots, and celery until softened.
- Add garlic and ginger, stir for one minute, then add cauliflower rice, peas, salt, and soy sauce, stirring to combine.
- Cover and cook until the cauliflower is tender, stirring occasionally.
- Move the veggies to the side and scramble the eggs in the center of the pan, then mix them into the fried rice.
- Drizzle with sesame oil, toss well, and serve warm.
