Cauliflower Fried Rice

Ingredients

The base

  • 1 pound cauliflower florets
  • ½ cup frozen green peas

The vegetables

  • 1 small yellow onion, chopped
  • 2 pieces carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 1 clove garlic, minced
  • 1 inch fresh ginger, minced

The seasoning

  • 1 tablespoon olive oil
  • ½ teaspoon fine sea salt
  • 2 tablespoons soy sauce or tamari
  • ½ teaspoon sesame oil (optional)

The protein (optional)

  • 2 pieces eggs

Instructions

  1. Rinse and rice the cauliflower using a food processor or box grater until it resembles rice.
  2. Heat olive oil in a skillet and sauté onion, carrots, and celery until softened.
  3. Add garlic and ginger, stir for one minute, then add cauliflower rice, peas, salt, and soy sauce, stirring to combine.
  4. Cover and cook until the cauliflower is tender, stirring occasionally.
  5. Move the veggies to the side and scramble the eggs in the center of the pan, then mix them into the fried rice.
  6. Drizzle with sesame oil, toss well, and serve warm.
