African Caribbean Shrimp Fried Rice
Ingredients
The rice

cooked day old long grain rice
The sauce and oil

shrimp, peeled and deveined

chicken bouillon powder

Salt and pepper to taste

water or stock (optional)
Instructions
- Break up clumpy rice before starting.
- Heat a large wok or skillet on medium-high heat with about a tablespoon of oil.
- Add the rice and stir vigorously for about 2-3 minutes, adding soy sauce and water or stock as needed.
- Set the rice aside and wipe the wok clean.
- Heat 1 teaspoon of oil in the wok, add shrimp, and sauté until cooked through, then remove and add to the rice.
- Add another tablespoon of oil, heat it, then add the eggs and stir to break them apart, then remove and add to the rice.
- Add another tablespoon of oil to the wok, followed by onions, peas, carrots, green seasoning, curry powder, and chicken bouillon powder, stirring until fragrant for about 2 minutes.
- Return the rice, eggs, and shrimp to the wok and stir until fully combined, adjusting seasoning as necessary.
- Garnish with chopped scallion and serve.
