Instant Pot Whole Chicken

Instructions
- Mix the garlic powder, cumin, smoked paprika, ground coriander, salt, and pepper in a bowl to create the seasoning rub.
- Pat the chicken dry with a paper towel and season the inside cavity and outside skin with the rub.
- Stuff the cavity with the halved lemon.
- Preheat the Instant Pot on the HIGH sauté setting and add avocado oil.
- Sear the chicken breast side down for 4-5 minutes until golden brown, then flip and sear the other side for another 4-5 minutes.
- Remove the chicken from the pot and place a metal trivet inside.
- Pour chicken stock into the pot and place the chicken breast side up on the trivet.
- Secure the lid, select the pressure cooker setting, and set to HIGH for 29 minutes.
- Allow a natural release for 20-25 minutes before removing the chicken and letting it rest for 10 minutes before serving.
