Instant Pot Whole Chicken

Ingredients

The chicken

  • 4 lb. whole chicken, giblets removed

The seasoning rub

  • 2 tablespoons avocado oil
  • 1 tablespoon garlic powder
  • 1 tablespoon cumin
  • ½ tablespoon smoked paprika
  • ½ teaspoon ground coriander
  • ½ tablespoon sea salt
  • 1 teaspoon black pepper

Additional ingredients

  • 1 whole lemon, halved
  • 1 cup chicken stock

Instructions

  1. Mix the garlic powder, cumin, smoked paprika, ground coriander, salt, and pepper in a bowl to create the seasoning rub.
  2. Pat the chicken dry with a paper towel and season the inside cavity and outside skin with the rub.
  3. Stuff the cavity with the halved lemon.
  4. Preheat the Instant Pot on the HIGH sauté setting and add avocado oil.
  5. Sear the chicken breast side down for 4-5 minutes until golden brown, then flip and sear the other side for another 4-5 minutes.
  6. Remove the chicken from the pot and place a metal trivet inside.
  7. Pour chicken stock into the pot and place the chicken breast side up on the trivet.
  8. Secure the lid, select the pressure cooker setting, and set to HIGH for 29 minutes.
  9. Allow a natural release for 20-25 minutes before removing the chicken and letting it rest for 10 minutes before serving.
