Instructions
- Stuff the chicken cavity with garlic, rosemary, bay leaves, and lemon wedges.
- Season the chicken with salt, pepper, and olive oil, then rub the spice mixture on the exterior.
- Place a rack in the Instant Pot and add the chicken broth.
- Add the chicken, breast side down, cover the lid, and seal the valve.
- Pressure cook on high for 24 minutes, then let the pressure naturally release for 15 minutes before a quick release.
- Check that the internal temperature reaches 165°F, then let the chicken rest for 5 minutes before carving.
