Ingredients

The chicken

  • 3 pounds whole chicken

The seasoning

  • 2 teaspoons salt
  • ½ teaspoon pepper
  • 2 cloves garlic
  • 2 sprigs rosemary
  • 5 leaves bay leaves
  • 3 wedges lemon
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon oregano
  • ½ teaspoon dried thyme

The liquid

  • 1 cup chicken broth

Instructions

  1. Stuff the chicken cavity with garlic, rosemary, bay leaves, and lemon wedges.
  2. Season the chicken with salt, pepper, and olive oil, then rub the spice mixture on the exterior.
  3. Place a rack in the Instant Pot and add the chicken broth.
  4. Add the chicken, breast side down, cover the lid, and seal the valve.
  5. Pressure cook on high for 24 minutes, then let the pressure naturally release for 15 minutes before a quick release.
  6. Check that the internal temperature reaches 165°F, then let the chicken rest for 5 minutes before carving.
