Ingredients

The chicken and broth

  • 1 cup Water or Broth
  • 3-6 lbs Whole Chicken

Optional stuffing

  • ½ medium Onion, cut in wedges
  • 1 sm Apple, cut in wedges
  • ½ large Lemon, cut in wedges
  • to taste Fresh Herbs (rosemary, sage, thyme)

Seasoning

  • to taste Spice Rub or Salt & Pepper

Instructions

  1. Pour water or broth into the inner cooking liner of the pressure cooker.
  2. Rub the chicken with a spice rub or salt & pepper.
  3. Stuff the cavity of the chicken with onion, apple, herbs, and/or lemon wedges.
  4. Set the chicken on the trivet/rack and lower it into the pot.
  5. Close the lid and set the vent to the Sealing position.
  6. Press the Pressure Cook/Manual button and set the cook time to 6 minutes per pound with a 10 minute Natural Release.
  7. After cooking, let the pot sit undisturbed for 10 minutes, then release any remaining steam.
  8. Carefully open the lid and remove the chicken to a platter.
  9. If desired, broil the chicken to crisp the skin before serving.
