Instant Pot Whole Chicken

Instructions
- Remove the giblets from the chicken and pat it dry with paper towels, then season with salt and pepper.
- Use the 'Saute' function on the Instant Pot, add the cooking fat, and brown the chicken breast-side down for 5-7 minutes.
- Flip the chicken and continue cooking for another 5 minutes.
- Cancel the 'Saute' function, place the chicken on a trivet in the pot, and add water or broth, garlic, and herbs.
- Lock the lid in place and set the vent to 'Sealing'. Cook on 'High Pressure' for 23 minutes.
- Allow for 10 minutes of natural pressure release, then release any remaining pressure and remove the lid.
- Transfer the chicken to a plate and let it cool slightly before serving.
