Ingredients

The chicken

  • 1 whole chicken (3-4 lbs.) whole chicken

The seasoning

  • 1 Tbsp. cooking fat of choice
  • to taste salt
  • to taste black pepper
  • 1 small bunch fresh herbs for poultry (rosemary, thyme, parsley, marjoram, sage, etc.)
  • 4 cloves garlic, minced

The liquid

  • 1 cup water or broth

Instructions

  1. Remove the giblets from the chicken and pat it dry with paper towels, then season with salt and pepper.
  2. Use the 'Saute' function on the Instant Pot, add the cooking fat, and brown the chicken breast-side down for 5-7 minutes.
  3. Flip the chicken and continue cooking for another 5 minutes.
  4. Cancel the 'Saute' function, place the chicken on a trivet in the pot, and add water or broth, garlic, and herbs.
  5. Lock the lid in place and set the vent to 'Sealing'. Cook on 'High Pressure' for 23 minutes.
  6. Allow for 10 minutes of natural pressure release, then release any remaining pressure and remove the lid.
  7. Transfer the chicken to a plate and let it cool slightly before serving.
