Plum Nectarine Pistachio Upside Down Cake

Ingredients

The cake

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine-grain sea salt
  • ½ cup unsalted butter
  • cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ¾ cup buttermilk
  • ½ cup chopped pistachios

The topping

  • ¼ cup unsalted butter
  • ¼ cup brown sugar
  • a pinch salt
  • 2 plums
  • 2 nectarines
  • for serving whipped cream

Instructions

  1. Preheat the oven to 350°F.
  2. Mix the dry ingredients in a bowl and set aside.
  3. Cream together the butter and sugar until fluffy, then add eggs and vanilla.
  4. Mix in half of the flour and all of the buttermilk, then add the remaining flour and pistachios.
  5. Melt butter in a skillet, add brown sugar and salt, and let it bubble.
  6. Arrange sliced plums and nectarines in the skillet, then pour the cake batter over the fruit.
  7. Bake for 40-45 minutes until a toothpick comes out clean.
  8. Allow to cool for 5-10 minutes before inverting onto a plate.
  9. Serve warm with whipped cream.
