Ingredients

Peach Layer

  • 3 Tablespoons Salted Butter
  • ½ cup Packed Brown Sugar
  • 3 Ripe Peaches peeled and sliced

Batter

  • 1 ½ cups All Purpose Flour
  • 2 ½ teaspoons Baking Powder
  • ¼ teaspoon Salt
  • cup Unsalted Butter
  • ¾ cup Sugar
  • 1 lg Egg
  • cup Water
  • ½ teaspoon Almond Extract

Instructions

  1. Preheat the oven to 350℉.
  2. Melt the salted butter in the bottom of a 9” x 1 ½” round cake pan.
  3. Stir in the brown sugar, covering the entire bottom of the pan.
  4. Arrange peach slices in a single layer over the brown sugar mixture.
  5. In a mixing bowl, combine flour, baking powder, and salt.
  6. In another bowl, cream together the unsalted butter and sugar.
  7. Add the egg and almond extract to the butter mixture and mix until combined.
  8. Gradually add the flour mixture alternately with water, starting and ending with the dry ingredients.
  9. Spread the batter evenly over the peach layer in the pan.
  10. Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
  11. Cool for 5 minutes before inverting onto a plate.
